Dean, a Halls Gap local and the creative force behind Block and Cleaver, has been an integral part of Pomonal Estate since May 2025. With years of experience as an executive chef in fine dining, Dean brings not only skill and precision to our kitchen but also a deep connection to the local community and its seasonal produce.

Our collaboration began with a shared passion for quality, local ingredients and genuine hospitality. Dean takes great pride in crafting dishes that celebrate the region, from produce grown in nearby soil to flavors inspired by the traditions of the Grampians. At Pomonal Estate, he transforms these ingredients into meals that feel effortless, thoughtful, and unmistakably local.
